Baked Cake Pops
Ingredients:
1 box Cake Mix (any flavour)
2 eggs
1/2 cup milk
1 pack of instant pudding
1 packet of white cooking chocolate
Food colouring
Sprinkles
Baking Pan
Makes:24 cake pops baked in shape pan.
Making the batter was simple – I used the cake mix bought in the supermarket. I prepared it according to the directions on the box, in bowl of electric mixer, mix all ingredients on low speed for 30 seconds. Scrape bowl; mix on medium speed for 2 minutes. I added one extra egg and instead of 1 cup of water, I used 1/2 cup of milk.
Prepare pan with vegetable pan spray and place on cookie sheet for stability. Fill each cavity 2/3 full with cake batter.
Bake 12-16 minutes, or until a skin has formed on top of each cake.
Cool pops for 15 minutes before removing from pan.
In a microwave safe bowl, melt cooking chocolate for 30 seconds; stir to distribute heat evenly, continue microwaving for additional 30 seconds.
Helpful tip – sometimes the candy stick has trouble staying in the cake pop – especially when you are dipping it into the thick melted chocolate. I dipped the stick into the melted chocolate and put the stick back into the cake pop. I let the pop sit for a few minutes putting them in a freezer letting the stick set a bit.
Dip pops in melted chocolate and gently shake off excess rolling the stick carefully.
I held the cake pops over a small bowl and shook various sprinkles over the entire pop. I placed them standing up in Styrofoam. (You can find Styrofoam at your local Lincraft store).
