Or, perhaps, you are looking for a perfect Valentine’s Day dessert for your partner? I am sure this Flourless Chocolate Cake recipe will help you to spoil your loved one. This simple chocolate dessert recipe can be used at any other occasions when you decided to indulge your sweet tooth, yummy!

 

Flourless Chocolate Cake

185g butter, chopped
1 teaspoon vanilla extract
1 ½ cups (330g) caster sugar
4 eggs, separated
¾ cup (35g) cocoa powder
¾ cup (180g) buttermilk

Chocolate filling
400g eating chocolate, chopped coarsely
250g butter, melted
½ cup (80g) icing sugar

First preheat the oven to 180C/160C fan-forced. Grease deep 20 cm-round cake pan, line base with baking paper.

Beat butter, vanilla extract and caster sugar in a small bowl with electric mixer until fluffy and light. Beat in egg yolks, one at a time. Transfer the mixture to larger bowl; stir in sifted flour and cocoa, and buttermilk.

Beat egg whites in small bowl with electric mixer until soft peaks form; fold into cake mixture, in two batches. Pour cake mixture into pan.

Bake cake about 1 hour. Cool cake in pan.

Make chocolate filling; reserve about 1 cup.

To make chocolate filling stir chocolate and butter in medium saucepan over low heat until smooth. Remove from heat; stir in sifted icing sugar. Cool chocolate filling to room temperature, beat with wooden spoon until thick and spreadable.

Split cake into three layers. For individual small cakes you can cut 10cm rounds using the round cookie cutter.

Place one layer on serving plate, spread thinly with some chocolate filling; repeat layering with remaining cake layers and filling.

Spread reserved chocolate filling all over cake. You can also decorate your cake with some chocolate curls, cocoa and icing sugar. To make chocolate curls you can use vegetable peeler. Use a chocolate bar at room temperature and drag the peeler along the side of the bar. Refrigerate for 3 hours before serving.
