Ultimate Double Chocolate Mini-Cups

100g milk chocolate melts
1/2 cup thickened cream
60g packet chocolate cups (chocolate cups are available from the bakery section of any good supermarket)
12 small fresh or frozen raspberries

Makes 12 mini cups

Method

Place chocolate melts in a heatproof, microwave-safe bowl or in a saucepan over boiling water. If using microwave melt the chocolate on medium for 1-2 minutes, stirring every 30 seconds with a metal spoon, or until smooth. Set aside for 10 minutes to cool.

Whisk cream until soft peaks form, add melted chocolate. Using a large metal spoon, gently fold until well combined.
Spoon chocolate mixture into a pastry piping bag. Decoratively pipe chocolate mixture into prepared chocolate cups. Top with a raspberry. Serve.
