Chocolate and Cranberries Brownies
Ingredients:
250g (8 ounces) butter
200g (7 ounces) good quality dark chocolate, chopped
150g (6ounces) milk chocolate, chopped
1 ¾ cups brown sugar
4 eggs
1 1/3 cups all-purpose flour
¼ teaspoon baking powder
1/3 cup cocoa, sifted
1 ½ cup dried cranberries
Makes 16 brownies
Method:
Preheat oven to 180C (355F) (160C fan-forced).
Grease 20-30cm (9inch) slice pan, line with baking paper, extending paper 2cm over sides.
Place the chocolate and butter in a small saucepan over low heat and stir until melted and smooth. Cool it for 10min.
Stir sugar, eggs, milk chocolate and chocolate mixture. Sift over the flour, baking powder and cocoa and mix to combine. Add the raspberries and fold them through the mixture just to combine.
Pour the chocolate mixture into a slice pan.
Bake brownies for 35-40 minutes or until set. Cool in pan before cutting.
Serve worm with double cream or vanilla bean ice-cream.
P.s. You can improvise with this brownies recipe adding fresh or frozen blueberries or respberries. If using frozen berries there is no need to defrost them. If you like your brownies really fudgy, bake them for less time.
