This simple Valentine’s Day Recipe of a Berry and Pink Champagne Jelly is a light alternative to the traditional chocolate Valentine’s Day dessert. This easy to make dessert recipe also makes for a great dessert in summer.
This year I decided to think outside the box while planning my Valentine’s present for my beloved husband. Instead of baking the chocolate cake I decided to make very light, summery dessert using fresh raspberries and pink champagne. Moreover, while making the dessert, I decided to make a second batch substituting the champagne for the juice, and make jelly berry cups for my gorgeous daughters – my two little Valentines. So, here it is my simple Berry and Pink Champagne Jelly Recipe for your special Valentine.
Berry and Pink Champagne Jelly
Ingredients
750ml bottle pink champagne or sparkling wine (if using sweet moscato wine use half of the sugar)
1 cup (215g) caster sugar
2 tbs gelatine powder
1/4 cup (60ml) hot water
Cooking time less than 10 mins
Serves 8
Method
To make the jellies sprinkle gelatine over hot water in a cup and whisk briskly with a fork until gelatine dissolves.
Combine champagne and sugar in a large saucepan over medium heat. Cook, stirring, for 2 minutes or until sugar dissolves.
Stir gelatine mixture into champagne mixture.
Pour evenly among eight glasses filling them in half. Place in the fridge set aside until just set. As soon as it starts to thicken, stir in the raspberries or other berries or fruit.
Pour the rest of the champagne mixture and cover the glasses with cling film and put in the fridge. Refrigerate for several hours, or until the jellies have completely set and serve.
This tasty dessert will be a hit with the adults. Omitting the champagne and substituting it with juice you will have tasty kids dessert, littlies would love it, especially if you get them to help you out in the kitchen.
