Raspberry and Coconut Easy Tarts
Makes 8
• 300g frozen raspberries, thawed (you can use any good quality frozen berries)
• ¾ cup desiccated coconut
• 1/3 cup icing sugar, plus extra, for dusting
• 2 sheets of supermarket shortcrust pastry, thawed
• 1 eggwhite, lightly beaten
• ¼ cup raw sugar
Preheat oven to 180C. Place your thawed berries, coconut and icing sugar in a bowl and mix until well combined.
Cut each pastry sheet into 4 squares.
Line baking trays with non-stick baking paper. Put your squares on the paper, place 2 tablespoons of the berry and coconut mixture in the centre of each square. Fold the corners over to enclose and press the edges to seal.
Brush with eggwhite and sprinkle with raw sugar. Bake for 15-20 minutes or until golden.
Dust with icing sugar. Serve warm. Enjoy!
