So, if you are looking for easy simple dessert recipe, that has this yummy warm taste of home, and you are not a pastry pro, and just learning how to make simple tarts, or simple looking for a recipe with berries, here it is, my easy raspberry tart that not only kids but adults will enjoy.

Who said that dessert recipes should always be unhealthy. This simple dessert recipe is not only easy to make but is full of berries goodness.

Wonderfully delicious raspberry are rich source of many health promoting plant-derived nutrients, minerals, and vitamins that are essential for optimum health. Delicious raspberries are low in calories and saturated fats but are rich source of dietary fiber and anti-oxidants.

Modern researches also say that blackberries, raspberries, black raspberries, strawberries and elderberries are among cancer-fighting foods. The anthocyanin, the potent cancer fighter in berries, is unaffected by freezing or cooking.

Fresh or frozen all berries should be a part of your healthy diet.

 

Raspberry and Coconut Easy Tarts

Makes 8

• 300g frozen raspberries, thawed (you can use any good quality frozen berries)
• ¾ cup desiccated coconut
• 1/3 cup icing sugar, plus extra, for dusting
• 2 sheets of supermarket shortcrust pastry, thawed
• 1 eggwhite, lightly beaten
• ¼ cup raw sugar

Preheat oven to 180C. Place your thawed berries, coconut and icing sugar in a bowl and mix until well combined.

Cut each pastry sheet into 4 squares.

Line baking trays with non-stick baking paper. Put your squares on the paper, place 2 tablespoons of the berry and coconut mixture in the centre of each square. Fold the corners over to enclose and press the edges to seal.

Brush with eggwhite and sprinkle with raw sugar. Bake for 15-20 minutes or until golden.

Dust with icing sugar. Serve warm. Enjoy!
