This mushroom soup is one of our family favorite recipes. This is a mushroom soup with a twist – it is Mushroom “Cappuccino” Soup. We have tried this soup while traveled to Belarus last year and I could not resist giving it a try and replicate the recipe and try making it at home.

This mushroom soup will be at its best if you make it with mixed wild mushrooms, but since living in Sydney I don’t have the luxury of having the fresh wild mushrooms all year around, I used a mixture of brown and white button mushrooms and dried porcini mushrooms, which added to the soup unforgettable, extremely flavorsome smell and taste.
Serve this soup with thick milk foam in coffee mugs, it takes on the appearance of cappuccino. Yummy!
Mushroom “Cappuccino” Soup
600-800g (1,5 lbs) mushrooms (champignons, brown button mushrooms, or mushrooms of your choice)
1 tbs dried porcini mushrooms
1 large onion, diced
1,5 tbs olive oil
1-2 garlic cloves, finely chopped
1l chicken stock (you can use vegetable stock for vegetarian recipe)
¼ cup white wine, optional
1 cup heavy cream
Sal and pepper
Nutmeg to sprinkle on the foam
Full cream milk for milk foam
Put oil to a saucepan, add onions, sate them on a medium heat just to make them golden, add chopped mushrooms, and sweat them over the medium heat for 5 minutes, add garlic, dried porcini mushrooms salt and pepper to taste. Cook uncovered for another 5 minutes, add stock and cook, covered, for 10 minutes, add cream and cook for another 5 minutes. Blend soup with hand blender until smooth.
I use my coffee frother to make the foam frothing full cream milk and adding a pinch of salt. Place a dollop of foam on top of hot soup, garnish with fried mushrooms and pinch of nutmeg, if desired. If I serve this soup to my kids, I sprinkle some breadcrumbs on top of the foam. Serve up the mushroom soup in a soup mug, or coffee mug, with the thick “cappuccino foam” the mug of soup looks like a cuppa Cappuccino!
