Smoked Salmon and Zucchini Pasta
This simple pasta recipe is among our families favourite weekend recipes for lunch. Just recently our kids agreed to try smoked salmon and they LOVED it. When I am preparing this pasta dish knowing that my kids are going to tuck in I don’t put dry chillies. Sometimes I cook the lighter version of this recipe omitting the cream, just cooking zucchinis and garlic in some virgin olive oil.

Smoked Salmon and Zucchini Pasta
Ingredients
400 g pasta
3 zucchinis
150g smoked salmon slices, torn into pieces salad, to serve
100 ml light cream or cream cheese
Extra virgin olive oil for cooking
3 garlic cloves
Sea salt
Freshly ground black pepper
1 tsp chilli flake
Fresh parmesan to serve
Freshly squizzed lemon juice
Method
Bring a large pot of water to the boil. Add the pasta and cook “al dente”.
Meanwhile grate the zucchinis and place aside.
In a large frying pan heat plenty of olive oil and add crushed garlic and chilli flakes.
Fry for about 1-2 minutes, add cream and grated zucchinis, season with freshly ground black pepper, sea salt.
Cook for a further 5 minutes and just at the very end add smoked salmon.
When the pasta is cooked (it should take 8-10 minutes), drain well and add to the sauce.
Toss the pasta through the sauce and spoon onto plates.
Grate fresh Parmesan over the top and finish with a drizzle of freshly squizzed lemon juice.
