Warm Grilled Capsicums and Mushrooms Salad
This delicious Vegetables Salad is always a big hit at parties and it's so easy to make. Everyone is always asking me for the recipe.
I am a big fan of grilled vegetables. Vegetables particularly great for grilling because many vegetables hold their shape well when being grilled and grilling process brings out and intensifies the natural flavour of the vegetables. The results are healthy and delicious.
Try this simple Vegetable Salad Recipe and you will not be disappointed.
Warm Grilled Capsicums and Mushrooms Salad
Ingredients:
2 large yellow capsicums
2 large red capsicums
2 large green capsicums
500g cup mushrooms, sliced
1⁄3 cup virgin olive oil
3 tsp balsamic vinegar
3 garlic cloves, crushed
2 tsp dry chillies
salt and ground black pepper
Method:
Preheat a grill on high heat. Cut capsicums into quarters. Remove seeds. Arrange capsicums in a single layer skin side up on grill tray. Grill for 10 minutes or until skin is black and blistered.
Transfer hot capsicums to a plastic bag, seal the bag and leave it to stand for 10 minutes. Peel and discard skin. Cut flesh into long, thick strips. Place in a bowl.
In a large frying pan sate your garlic in a splash of olive oil for a minute or so, add mushrooms, add dry chillies and cook for additional 5 minutes. Add your mushrooms with all the pan juices into the bowl with capsicums.
Combine olive oil, balsamic vinegar, salt and pepper to taste in a jug. Pour over vegetables and toss well to coat in oil mixture.
Season salad with salt and pepper to taste and toss gently to combine. Spoon into a serving dish on a bed of green leave salad and serve with barbecued fish or chicken, if desired.
You can also use this Capsicum and Mushroom Salad as a bruschetta topping.
