Simple Dip Recipe

My Spinach and Leek Dip in a Cob is to die for. Each time I serve it someone asks me for the recipe.

You can use this simple appetizer recipe while organizing your next cocktail party, a picnic at the park, to serve this simple dip for your friends watching a DVD on a Saturday night or, perhaps to your family and friends at your Christmas dinner celebration.

Not every party appetizer needs to be complicated, sometimes simple dishes such as this simple Spinach and Leek Dip is a bigger hit than something extravagant. Give it a go and enjoy!

 

Spinach and Leek in a Cob

Ingredients:
1 leek (white part) chopped
1 clove of garlic finely chopped
1 packet of frozen spinach
1/2 cup of mayonnaise
1 carton of sour cream
1 packet of spring onion soup
1 teaspoon of butter
olive oil

1 cob loaf
1 French bread stick

Melt butter in some olive oil, then lightly fry the garlic leek. Add spinach to the pan and stir until warm. Turn off the heat and allow mixture to cool. Mix sour cream, mayonnaise, spinach and leek, and spring onion soup together in a bowl. Cut the centre out of the bread cob. Pour the mixture into the hollowed out cob loaf and place in the oven for about 20 minutes on 150 degrees C or until warmed through.

Serve with some baguette cut in small pieces.
