Simple recipe of Mussels in a Spicy Tomato Sauce. Very easy to make this recipe will satisfy all seafood lovers. Serve these tasty mussels with crusty bread to soak up all the rich juices and some green salad as a side dish.
Adjusting the quantities of mussels this recipe can become a quick, tasty, inexpensive entree, but it would also make a perfect casual meal if you increase the quantities. Perfect light family meal.
Mussels in Spicy Tomato Sauce
Ingredients
1kg fresh mussels
6 tbsp extra virgin olive oil
6 garlic cloves, crushed
1 fresh chilli (you can use 1tsp of dry chillies instead)
80 ml vegetable stock
1 can of diced tomatoes with basil and oregano
1 tsp sugar
sea salt
dry Italian herbs
parsley
Method
Rinse the mussels under the cold tap and pull off any beards. Discard open or broken shells.
Heat oil in a large deep pan and add chilli and garlic. Fry over a medium heat for 2 minutes or so.
Add vegetable stock, tomatoes, sugar, herbs and salt, cook over a high heat for several minutes. Add cleaned mussels and cook until the mussels are open (5 – 6 minutes), shaking pan occasionally. Don’t forget to discard any unopened shells.
Remove pan from heat, add parsley and stir well. Serve immediately with some crusty sourdough bread or bruschetta to deep into the lovely juices.
P.s. You can use fish stock to intensify the flavour. Canned tomatoes are pretty acidic, unless you cook them long enough so I add a little bit of sugar to balance the broth. Always scrub mussels well before cooking to remove grit and sand and remove 'beard’ by pulling firmly towards the pointed end. An effective method of cleaning mussels is by rubbing two mussels together.
