Easy Risotto Recipe

Cooking perfect risotto may sound a daunting thing at first but with some practice, good easy basic risotto recipe any one can cook perfectly creamy and tender risotto.

In this simple risotto recipe I will give you some basic instructions and tips for your yummy risotto.

Tip 1. Always use simmering stock. Add the hot liquid slowly, one ladleful at a time, while the rice is stirred constantly, the stock must be absorbed after each addition before more is added. This will released the starch from the rice, and make the risotto creamy.

Tip 2. Before adding the hot stock, cook the rice in the butter until the grains look glassy.

Tip 3. Use a heavy-based saucepan to prevent the rice sticking to the bottom for the pan. The cooking pan should be big enough to accommodate the rice which will swell as much as three times.

Risotto Marinara Recipe



6 cups (1,5 litre) chicken stock
90g butter
3 tbs olive oil
1 small onion, finely chopped
350g arborio rice
½ cup dry white wine
3 garlic gloves, crushed
400g seafood marinara mix
Salt and freshly ground pepper
½ lemon, juiced
½ cup grated Parmesan cheese
½ cup roughly chopped continental parsley


Bring the chicken stock to a simmer and keep hot while you cook the risotto.

In a heavy-based pan melt the butter, add the onion and cook gently until just softened. Add the unwashed rice and stir for 3-4 minutes until it’s translucent. Add the wine and, when evaporated, add a ladle of simmering stock. Cook over a moderate heat, stirring until the stock is absorbed. Repeat the process, adding the stock one ladle at a time, until the rice absorbs the stock, stirring constantly. Cook until the rice is tender yet firm to the bite. The rice should be cooked after 20 minutes.

Heat olive oil in large saucepan over medium heat. Add garlic and cook for 1 minute. Add marinara mix and lemon juice, cook for 2-3 minutes, or until just cooked. Remove from heat and season with salt and pepper.

Add the marinara mix to the rice, fold through the parsley.

Just before serving, fold in the Parmesan cheese. Taste for seasoning and serve immediately.
