Crispy Oven Baked Chicken


Who does not like crispy chicken with golden crispy crust and moist meat?!

There are hundreds of recipes for crispy chicken you can find in the internet and cooking books.

After watching my beloved My Kitchen Rules where they cooked crispy chicken I decided to give their chicken recipe a try, I just have added my slight changes, as always:), to the recipe.

What should I say, the chicken turned out absolutely beautiful, with crispy golden crust outside and moist, succulent meat inside.

What I like about this chicken recipe is that there is no frying involved, so, it makes this simple recipe considerably healthy variation to the KFC fried chicken.






2 cups cornflakes
1/4 cup grated tasty cheese
1 egg
1 tbs low fat whole-egg mayonnaise
1 garlic clove, peeled, crushed
2 tbs finely chopped parsley
Salt and pepper, to season
8 chicken drumettes or boneless thigh filets


In a big bowl mix mayonnaise and garlic add the chicken and marinate it in the fridge for 3-4 hours.

Preheat oven to 180C and line an oven tray with baking paper.

To make chicken, place cornflakes and cheese in a food processor and process until coarse crumbs form.

Whisk egg, add parsley, season with salt and pepper.

Roll drumettes in egg mixture then cornflake crumbs turning well to coat. Place chicken on prepared tray and bake for 20 -30 minutes or until golden brown, crunchy and cooked through.

Simple family recipe of Crispy Chicken - easy to cook, inexpensive, with the perfect result guaranteed! Serve it with some baked potatoes, salad on the side – perfect family dinner recipe.
