600g chicken thigh fillets
zest and juice of 1 large lemon
2 tbsp cornflour
2 tbsp honey
1 cup of chicken stock
1 tbsp ginger, grated
2 tbsp light soy sauce
Combine lemon juice, honey, ginger, soy sauce and chicken stock in a bowl, add chicken and marinated it for a couple of hours in the fridge.
Pre-heat oven to 210 °C.
Heat a non-stick backing pan over high heat, add oil and chicken with all the juices. Sauté for 5 minutes until the chicken is starting to get a nice golden brown colour, the marinade should reduce by half.
Mix the cornflour with 2 tablespoons of chicken stock. Pour the cornflour mixture over the chicken and continue stirring as the liquid will immediately thicken.
Put the pan with the chicken to the hot oven and roast for about 20-30 minutes until browned. Garnish with lemon zest and serve.
Serve with steamed rice and some fresh salad.
