Pork and Apples Roast
1 1/2 - 2kg (4 4.4lbs) boneless pork loin
2 granny smith apples, chopped coarsely
1 bunch of continental parsley, chopped
3 gloves garlic, crashed
2 teaspoon of chili paste
Olive oil, salt, black pepper, dry chili flakes
Sea salt flakes, for rubbing
Preheat oven to 220C (425F) fan-forced.
Using the point of a sharp knife, score the skin of the pork. To make the staffing put the garlic and 2 tablespoons of olive oil on the pan, sauté until it just change the color, add chopped apples and sauté for 2-3 minutes, until the apples soften. Add the parsley, salt, pepper and chili paste to the apples mixture, mix well. Press the staffing mixture against loin along width of pork. Roll pork to enclose stuffing, securing with kitchen string. |

Rub the skin with the some rock salt, garlic and dry chili flakes, bake for 25-30 minutes until the skin has blistered. |
Reduce the heat to 190C (370F) and continue cooking for further 50-55 minutes or until cooked to your liking.
Remove the meat from the oven and place on a hot serving platter. Rest the meat for at least 5 minutes before cutting and serving.
