This butter cake recipe is my kid's favorite. It can be easily adjusted, so you can make mini butter cakes for your kid’s lunchboxes. Use this easy cake recipe; add some healthy ingredients and you will have an easy healthy snack recipe for the whole family.

If I use this cake recipe as a sweet treat for the lunchbox I bake it in a small friands pans. But you can use your basic cake dish and cut the butter cake in smaller pieces.
Butter Cakes with Raisins and Coconut
serves 6
Ingredients
- 1/2 cup (100g) caster sugar
- 1/2 cup (75g) self-raising flour
- 1/2 cup (45g) desiccated coconut, plus extra to serve
- 1/4 cup (30g) almond meal
- 4 eggwhites
- 125g butter, melted
- 1 cup raisins
Turn on the oven to 200°C/ 400F and let it heat up. Spray the holes of the friands pans with cooking oil.
Combine sugar, flour, coconut and almond meal in a large bowl. Add eggwhites and use a wooden spoon to stir to combine. Add melted butter and stir to combine.
Spoon mixture among prepared pans. Place 5-6 raisins on top and press to indent into cake mixture. Bake in oven for about 15 minutes or until a skewer inserted into the centres comes out clean. Take the pan out of the oven and place on a wire rack to cool slightly before turning out. Carefully remove the cakes from the pan and put them on wire racks to cool down completely.
You may also brush tops of your cakes with a little water and sprinkle with extra coconut to serve.
