Sushi Rolls

Makes 35

  • 200g (1 cup) sushi rice
  • 2 tablespoons white rice vinegar
  • 1 tablespoon sugar
  • salt
  • 10 nori sheets
  • 185g can tuna in brine
  • 2 tablespoons mayonnaise
  • sliced avocado, cucumber, shredded carrots

Put the rice in a saucepan with 310ml of water and bring to the boil. Simmer, covered, over very low heat for 12 minutes, or until the water is absorbed. Remove from the stove and leave for 15 minutes.

In a bowl mix the white vinegar, sugar, pinch of salt, then stir through the rice, mix carefully trying not to break rice grains. Leave to cool.

For tuna sushi rolls filling drain tuna and mix it in a bowl with the mayonnaise.

Cut the nori sheets in half. Put one sheet of nori on a bamboo sushi mat, shiny side down. With your wet hands, spread a thin layer of rice (handful will do) on the sheet of nori, and press into a thin layer, leaving 2cm free at the top end of the nori. Arrange the cucumber, avocado and seafood of your choice in a line down the centre of the rice. Lift the end of the mat, and gently roll it over the ingredients, pressing gently. Roll it forward to make a complete roll. Repeat with remaining ingredients.
Cut each roll small slices using a wet, sharp knife.

Here you are, your Easy Sushi Rolls. Enjoy!
