Cottage Cheese and Cranberries Cookies
Makes 20 cookies
Ingredients
2 cups self-raising flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter, softened
1 cup brown sugar
2 eggs
2 teaspoons of vanilla extract
1 cup cottage cheese
1 cup dried cranberries
Preheat your oven to 180C/350F.
Combine self-raising flour, baking powder and salt, set aside.
In large bowl beat butter and the sugar with a wooden spoon until light. Add eggs, cottage cheese, and dried cranberries, mix until smooth.
Gradually stir in flour mixture.
Roll the dough into 3 cm balls. Place the cookies 2 cm apart on the cookie sheet and press firmly with a teaspoon forming your round cookies.
Bake at 180C/350 F for 12 to 15 minutes or until golden.
Allow cookies to cool on baking sheet for 5 minutes. Remove to a wire rack to cool completely.
Serve with milk, yummy!
