This simple recipe of Smoked Salmon Stuffed Eggs can make a lovely family dinner starter or an easy to make party finger food. This is my spin to the old-fashioned deviled stuffed eggs.
Smoked Salmon Stuffed Eggs
Ingredients
12 eggs
5 thin slices of smoked salmon, finely chopped
3 tablespoons finely grated onion
1/4 cup crème fraiche or Philadelphia cream cheese
2 tablespoons finely chopped dill, plus sprigs for garnish
Salt and ground black pepper
2 teaspoons fresh lemon juice
several dashes of hot Tabasco sauce
Makes 24 portions
Preparation
To hard-boil your eggs place the eggs in a large saucepan and cover with water by 2 cm. Bring to a boil and cook for 10 minutes. Remove from the heat, drain and run with cold running water until cool enough to handle. Peel the eggs and cut them in half lengthwise.
Scoop out yolks. Place yolks in medium bowl and mash with fork. Mix in cream cheese, onion, dill, lemon juice, Tabasco sauce, and chopped smoked salmon. Season to taste with salt and pepper.
Spoon equal amounts of the mixture into the egg white halves and chill well before serving. Can be prepared 4 hours ahead. Cover and refrigerate. Place salmon-stuffed deviled eggs on platter. Garnish each with some dill, if desired, and serve.
