Ingredients
1 teaspoon unflavored gelatin
125 g smoked salmon, coarsely chopped
1 cups sour cream
0,5 cup cream cheese
1 to 2 tablespoons fresh lemon juice
1 tsp (5 mL) chopped drained capers
coarse salt
fresh dill, for garnish (optional)
crackers or baguette slices, for serving
Directions
Place 2 tablespoons cold water in a small saucepan, sprinkle 1 teaspoon of gelatin and let soften for a couple of minutes. Gently heat over low, stirring, just until gelatin dissolves and set aside.
In the food processor, combine salmon, sour cream, cream cheese and lemon juice. Puree until smooth, season with salt. When the mixture is smooth, with motor running, add slightly cooled gelatin mixture, and blend until combined. Add copped cappers and blend the salmon mixture until just combined.
Pour into two ramekins or bowls. Carefully cover the containers with plastic wrap, trying not to touch the surface. Refrigerate until firm about 2 hours or up to overnight.
You can garnish your salmon mousse with dill and serve with crackers or baguette slices.
If you fancy you may use a piping bag with a large star tip, pipe or spoon mousse onto crackers or cucumber slices. Sprinkle with dill or lemon zest for garnish.
