Recipes with prawns are among my favorite easy and healthy party food recipes. These yummy prawns’ skewers can be served as a main cause at your next BBQ party, or as a lovely easy appetizer.
- 12 bamboo skewers
- 36 large raw king prawns, peeled, deveined, tails intact
- pineapple pieces
- 1/2 cup sweet chilli sauce
- 1 grated knob of ginger
- 2 limes, juiced
- 4 tablespoons light soy sauce
- 1 tablespoon sesame oil
- Lime wedged, to serve
Soak the skewers in cold water for at least an hour to prevent them burning.
Thread prawns and pineapple pieces on to each skewer making sure you pierce the body of each prawn in two places to firmly secure. In a small bowl whisk together the sweet chilli sauce, lime juice, soy sauce and sesame oil.
Brush the mixture over all the skewers on both sides evenly. Cover and refrigerate for 15 minutes. Don’t let them sit too long after applying the marinade or the lime juice will start to ‘cook’ the prawns.
BBQ or grill briefly, approximately 2 minutes each side, turning once. As soon as the prawns go from green to pink on both sides, remove them from the heat. Take care not to overcook or they will be dry and rubbery.
Serve immediately with some green salad and lime wedges and ready-made aioli or mayonnaise, if desired. Enjoy!
