Party Food Appetizer

Bocconcini, Tomato and Basil Tart

Serves 4

Ingredients

• 1 good quality supermarket Turkish pide bread
• 1 table spoon extra virgin olive oil
• 2 cloves garlic, crushed
• 200g semi-dried tomatoes
• 200g sliced bocconcini
• 1/2 bunch fresh basil

Preheat oven to 180C. Score the Turkish pide 2cm around the edge of the bread without cutting all of the way through. Remove the middle and discard.
Brush the inside of the bread with olive oil. Mix crushed garlic, sliced bocconcini and semi-dried tomatoes in a bowl. Top the prepared mixture into the bread. Roughly tear the basil leaves and sprinkle over the topping.

Line a large tray with baking paper. Place pide onto the tray and bake for 12-15 minutes.

P.s. You can also try different alternatives, substitute the bocconcini for camembert cheese or feta cheese, add some chili flakes or chopped fresh chili for some kick.
