Looking for an easy party food recipe - there is nothing better than the combination of Mozzarella, Tomato, and Basil. And this party food recipe is basically the caprese salad that we put on a stick. They really are easy to throw together and hard not to like.
Bocconcini Tomatoes Skewers
Ingredients
- 1 punnet of cherry tomatoes
- 1 bunch of fresh basil leaves
- 1 cup of cherry bocconcini
- extra virgin olive oil
- good quality sea salt flakes
- freshly ground pepper
- small skewers
balsamic glaze and basil pesto optional
Wash and dry cherry tomatoes. Pick, wash and dry basil leaves off bunch. Drain cherry bocconcini, bite-sized mozzarella balls, you could also cut a big ball of mozzarella into chunks.
Thread a cherry tomato onto a skewer, followed by a whole cherry tomato wrapped into a basil leaf.
If I am serving the skewers as a side dish I use a full length skewers, repeating tomatoes and cherries to fill the skewer, for a party food I like to stop at one of each using tooth picks as skewers.
Once you have threaded all the ingredients, place on a plate and drizzle with the good quality extra virgin olive oil, crunch the sea salt over the top and grind over fresh black pepper. Place the skewers on a platter and serve as a canapé.
Serving Suggestion: For a stronger basil flavor - marinate the bocconcini overnight in a good quality basil pesto, or chili, oil, thyme and garlic, roll the bocconcini in finely chopped herbs, minced garlic and grated lemon rind and drizzle with some balsamic glaze (available in supermarkets and gourmet delicatessens). You can create the same tomato and mozzarella salad in a bowl with chopped tomatoes, fresh basil, bocconcini (or you can use buffalo mozzarella) and a balsamic vinaigrette. To add some zing to your salad just add chopped mint and grated lime rind. Bellissimo!
Notes: The key to this dish is always using fresh ingredients (basil, cherry tomatoes and bocconcini) and the good quality extra virgin olive oil, basil pesto and balsamic vinegar.
