Another simple party appetizer recipe of Stuffed Mushrooms everyone will love!

Mushrooms are called meat for vegetarians or simply a part of any great family meal. Mushrooms are low in calories, fat free, cholesterol free, with extremely low levels of sugar and salt; white or brown, cultivated or wild, they provide a valuable source of dietary fibre, vitamins and minerals.

Healthy, easy to cook yet yummy, this simple party recipe will help you entertain your guests and satisfy every food lover.

This mushrooms recipe is so easy to prepare that you could use it as your family dinner recipe to cook on a weekend.

Feta Stuffed Mushrooms

Makes 6


• 12 large mushroom caps
• olive oil
• 3 cloves garlic, chopped
• 100g reduced-fat feta cheese
• 3 tablespoons continental parsley, chopped
• ½ cup grated parmesan cheese
• ½ teaspoon lemon zest, grated
• salt and pepper, to taste


Remove the stems from the mushrooms.

Place caps on a lightly oiled cookie sheet.

Finely chop the mushroom stems. Heat oil in large saucepan and sauté garlic on low heat until turning golden. Add chopped mushrooms and sate for 3-4 min. Allow to cool.

In a bowl, break the feta cheese up into small pieces, add chopped continental parsley, and mushroom and garlic mix. Add lemon zest and season with some salt and pepper.

Don’t overdo with salt as feta is pretty salty cheese.

Warm the oven for 180C/350F.

Stuff each mushroom cup with the prepared mixture. Sprinkle with some parmesan cheese. Place in a baking pan and bake for about 15 minutes at 180C until golden on top. Serve while hot.

You can prepare these mushrooms in advance till the last stage, and put them in the oven just before you need to serve them.

Simple mushroom recipe which is tasty, nutritious, healthy and does not involve a lot of cooking techniques and skills.
