Feta Stuffed Mushrooms
Makes 6
Ingredients:
• 12 large mushroom caps
• olive oil
• 3 cloves garlic, chopped
• 100g reduced-fat feta cheese
• 3 tablespoons continental parsley, chopped
• ½ cup grated parmesan cheese
• ½ teaspoon lemon zest, grated
• salt and pepper, to taste
Preparation:
Remove the stems from the mushrooms.
Place caps on a lightly oiled cookie sheet.
Finely chop the mushroom stems. Heat oil in large saucepan and sauté garlic on low heat until turning golden. Add chopped mushrooms and sate for 3-4 min. Allow to cool.
In a bowl, break the feta cheese up into small pieces, add chopped continental parsley, and mushroom and garlic mix. Add lemon zest and season with some salt and pepper.
Don’t overdo with salt as feta is pretty salty cheese.
Warm the oven for 180C/350F.
Stuff each mushroom cup with the prepared mixture. Sprinkle with some parmesan cheese. Place in a baking pan and bake for about 15 minutes at 180C until golden on top. Serve while hot.
You can prepare these mushrooms in advance till the last stage, and put them in the oven just before you need to serve them.
