Perfect Sunday morning breakfast! There is really nothing better than waking up on a Sunday morning to be welcomed by a plate of delicious warm French toast with maple syrup!
One of our families favourite breakfasts on a lazy Sunday morning is making French toast.
This simple recipe is my slight variation of a classic – Stuffed Berry French Toast. After trying this simple breakfast recipe, I am pretty sure you will be very happy with my variation on the please-everybody morning favourite.
Stuffed Berry French Toast
Ingredients
½ cup low-fat ricotta cheese (you can also use cottage cheese)
3 tsps honey
4 large eggs (beaten)
½ cup milk
½ tsp vanilla extract
pinch of cinnamon
8 slices bread
1 cup blueberries (if using frozen berry defrost them before adding to ricotta)
butter, olive oil for frying
maple syrup or honey (optional)
Directions
Combine ricotta cheese and 2 tsps of honey and vanilla extract in a bowl, stir through the blueberries. Combine eggs, milk, remaining honey, and cinnamon in shallow bowl.
Spread ricotta-berries mixture evenly over 4 bread slices placing remaining bread on top to form sandwiches.
Put some olive oil and small piece of butter (as you know, butter adds this unforgettable flavour to the toasts) in a large frying pan, heat over medium heat. Dip sandwiches in egg mixture, coating both sides. Cook on each side for 2 to 3 minutes or until golden brown.
Serve with maple syrup or honey, if desired.
I made this simple breakfast recipe for Sunday morning brunch for my family last weekend. It was an instant classic.
I didn't have fresh blueberries, so I used frozen berries. You can also use different kinds of bread for this recipe, wholemeal bread for healthy option or white sweet for not so healthy, next time I will try using brioche, yummy ;).
My 7 year old said, that this was the Best breakfast ever- DELICIOUS!!!!
