School holidays... Morning... My girls are waking up and there's no need to call them to have breakfast, following their senses here they are sitting at the breakfast table grinning cheekily...Pancakes with apples and fresh berries, their favourite food.
This time I decided to make the pancakes with yogurt and apples. They turned out very fluffy and irresistibly tasty.
Pancakes with Apples
Ingredients
1 cup of flour (250ml)
250 ml yogurt
1 egg
Pinch of salt
1/4 teaspoon baking powder
1-2 tablespoons olive oil
1teaspoon vanilla extract
1 tablespoon caster sugar
1 apple, grated
Method
Sift and mix together flour, salt and baking powder.
In a separate bowl mix together yogurt, egg, oil, sugar, apple and vanilla extract.
Mix together flour mixture and yogurt mixture, but don't overbeat the batter, overbeating will result in flat pancakes.
Leave the batter for 15-20 min., all the flour lumps will disappear.
Fry the picklets on slightly greased with olive oil hot pan.
Serve hot. Yummy comfort breakfast for the whole family.
